This series pairs chefs from MICHELIN Star restaurants with emerging culinary talent to give Canadians a glimpse into the future of luxury through one-of-a-kind dining experiences.

The magic of A Taste of the Future lies in the creative collaboration between established and emerging chefs. For A Taste of the Future: Vancouver and A Taste of the Future: Montreal, our featured chefs traveled across Canada to deliver unforgettable dining experiences in two different cities, exploring the passion for innovation that’s ever-present throughout the history of Mercedes-Benz.

Montreal: Mastard
A Taste of the Future: Montreal showcased a Mercedes-Benz twist on traditional Quebecois cuisine. Discover some of the exquisite dishes below.
Lettuce tart with herb emulsion, camelina, and spinach. The freshness and colouring of this dish is evocative of Mercedes-Benz' commitment to renewable energy technologies.
Hokkaido scallop and mousseline, smoked citrus butter sauce, and caviar—a refined dish that recalls the craftsmanship of Mercedes-Benz artisans.
Guinea fowl thigh stuffed with sausage, asparagus, jus, and maitake mushroom—a culinary tribute to sustainability, one of Mercedes-Benz' central pillars.
Vancouver: St. Lawrence

Beef tartare with grilled oyster, beef fat mayo, lovage, and Pastis froth, evocative of the three elements represented by our three-pointed star.

A Taste of the Future: Toronto
The very first A Taste of the Future event took place at FRILU, a One MICHELIN Star restaurant and the only restaurant in Canada to receive a MICHELIN Green Star in recognition of its sustainable practices. The event saw a first-of-its-kind collaboration between John-Vincent Troiano, Executive Chef of FRILU, alongside Chef Joel Gray and Hannah Harradine, co-founders of Down Home by Sumac & Salt. Our chefs drew their inspiration from the pioneering spirit of Mercedes-Benz, crafting original courses along themes of innovation, aesthetics, and sustainability.

Chef John-Vincent Troiano
John-Vincent Troiano was raised in a traditional Italian family who centred themselves around the joys of food and company. During his youth, Troiano discovered the wonders of Japanese culture and marked the beginning of his career by joining master chef Hashimoto, learning the spirit of selfless hospitality and the intricacies of Kaiseki cuisine.
His resume includes world-famous restaurants: the iconic Noma in Copenhagen, and Three MICHELIN Star Benu in San Francisco. Upon returning to Toronto, Troiano became Chef de Cuisine at Toronto’s Tuscan restaurant, Tutti Matti.

One MICHELIN Star and Green Star restaurant FRILU is the culmination of John-Vincent's expertise, showcasing the simplicities of local ingredients combined with the complexity of Asian flavours and techniques developed in collaboration with Chef So Sakata.
